Vanilla Chia Seed Pudding

INGREDIENTS:

  • 2 cups coconut milk from a can
  • 1/2 cup chia seeds
  • up to 1/4 cup maple syrup
  • optional cinnamon

INSTRUCTIONS:

Combine all ingredients except for cinnamon in a bowl and mix well, pour into a glass jar and place in fridge overnight. Sprinkle cinnamon on top to taste. Makes about 3 servings, lasts about 3 days. 

This is one of my favorite go-to desserts, it’s got nutritional value {healthy fat, fiber and protein}, tastes delicious and is really easy to make.
