Have Your CARROT CAKE and Eat It, Too!

A few weeks back when my sister (and total bestie) and I were preparing for my niece Edie’s first birthday party, we wanted to make the most amazing cake – and of course it had to be made with clean ingredients, to be vegan and free of refined sugars. So we did a bunch of research and came up with the frosted carrot cake recipe below (also pictured above). It was divine! Like, seriously so good. I can’t wait to make it again. And again, and again, and again.

One thing I want to mention is that cleaning up your diet and eating healthy does not mean deprivation! Not at all. It’s simply about finding ways to recreate the foods you love using ingredients that are wholesome, have nutritional value and don’t spike your blood sugar levels all crazy (blood-glucose-level rises and crashes from refined sugars make us moody and craving more…it’s a vicious cycle…no bueno <— a full post on this topic coming soon). This delicious vegan and sugar-free carrot cake is the perfect example of how you can have your cake and eat it, too!
