Vegan Mac and Cheese



This recipe is one of my favorites for a hardy meal that’s super easy to make and serves all in one bowl.

Pasta Ingredients:

+ 1 package {8 oz} brown rice pasta

+  1/2+ cup frozen peas

Choose your shape of brown rice pasta — Tinkyada is by far my favorite brand. Boil as directed on package, 5 minute before straining add frozen peas to the boiling water, then strain all together. Drizzle a little oil, mix, set aside.

Vegan Cheese Sauce Ingredients:

+ 3/4 cup water or nut milk

+ 1 .5 cups raw cashews

+ 1/4 cup nutritional yeast

+ 1 teaspoon sea salt

+ black pepper

Add liquid and then the balance of ingredients into blender and blend well.

Mix pasta with sauce and eat up!
